A little less volume is ok, as long as it still has enough dynamic range. To my mind, that's really what loud is for -- so "soft can be loud enough, and "loud" can still be different enough to provide some drama. Beyond that, really loud acoustic guitars are for guys trying to play over banjos.
My hog-topped Larrivee L had the opposite problem. Apply enough force with a pick and it would get plenty loud. But it took quite a bit of force to get a good, full sound out of it - it was not responsive to a light touch, and a guitar has to speak softly at low volume, not whisper - so it still had a narrow dynamic range that didn't suit me. I'd pay very close attention to this floozie's response at both ends of its volume range, and the breadth of that range, before I invited her to stay. But you already knew that.
