I can leave out the seafood, right? It might not be real gumbo (and it wouldn't be because my first stabs will involve roux in a jar), but at least it's not chili with beans, right? Yes the seafood is optional. In fact I would say just chicken and andouille is probably pretty common

Everyone else in the household has seafood allergies, and I try to avoid making dishes where I am the only person who can consume them.

I learned that from people I know from Jackson Mississippi. Who were originally from Wisconsin, right? Sadly, no. Southerners through and through. What is it about beans in the south? Cornflake has said no beans in chili, now you're saying no beans in gumbo. Evan or anyone, what's a good southern recipe with beans involved? I do make red beans and rice, so besides that? I do want to know.

Well, no gumbo for Billy-Bob tonight -- the place that looked the most promising sold out of it today, so maybe I'll swing by there for lunch tomorrow. Tonight I made do with a footlong Vito from Jimmy John's -- with hot peppers, of course.

Texans are funny about chili.
Around here, white beans are delish, I make them often. Baked beans are universal, no? Field peas. Lima beans, or as they call them here, butter beans. And so on.
