I don't think they tested it down south. When we in Louisiana would watch the Kraft Mystery Theatre on TV, in the 50's, these commercial breaks would come on showing a cook blending things like that cheese stuff with mayonnaise and cream cheese and and tuna, and I remember asking my mother "Who eats that kinda stuff?" She whispered back, to avoid giving offense to whomever might have been listening form a thousand miles away, "That's what yankee people eat."[/quote] That made me chuckle. I've heard that you folks call onion, celery and green bell pepper the "holy trinity". Up here, any good soup or stew starts with sautéing onion, celery and carrots. One difference, but it does indeed make a difference.

Nice. Is Guidry's something sold intact, or is it something ya put together on the fly, like the trinity? Guidry's Fresh Cuts are simply diced vegetables. Creole mix is as I described. They also package each of those things separately. They are vastly superior to that Frozen crap that I've seen in Walmart. Problem is, it's just a local product.

On the side, yes. I knew that was coming. I cooked a chili-off in 2000 Labor Day weekend. There must’ve been 40 different chilis. They were all so different - hot, mild. No beans. No meat. and halibut fish Some looked like soup. Some of them were absolutely horrible. At least my chili was third place. (My helper put the fish in my chili- blech) Edit: I decided not keep my chili. I didn’t wanted my ‘fish’ chili I decided to cook another one pot
