Alright I have some fresh cut (small) planks of cherry and laburnum(golden chain) that need to cure for a while before they can be worked. Should I seal the grain ends now before they fully dry, or wait until more of the moisture is out of the wood.
2. Should I seal the ends of ALL the wood I'm not going to be using immediately and if so what do you recommend. I was going to use shellac, but I've also heard of folks using wax or lacquer.

Sealing the end grain will slow the drying process and in your wet climate I don't think that is necessary unless you are worried about the wood picking up moisture. It should be stacked with spacers to allow air between boards. Stored off the ground and under a roof to keep it out of the rain.

I watched a little bit of Fretboard Journal's podcast with Dana Bourgeois on Torrefaction. He made one comment. "If you look at the demographics of who buys high end guitars, it's Baby Boomers. And they probably don't have 10 years to wait for a guitar to break in."

When ever I need to cure wood I approach it carefully, never lowering my gaze. Then I walk three times around it in a clockwise direction, all the while muttering the secret incantations of the elder wood nymphs. Just as it begins to get sleepy, I lay hands on it and at the top of my lungs yell, HEAL THYSELF, IN THE NAME OF LOYD LOAR! Usually that does the trick.
