...that explain why I'm overweight. I never liked potato salad as a kid. Of course when a pretty young woman I was falling in love with put some on my plate I had to eat it...and discovered it was pretty good. So thirty odd years ago she showed me how to make it. I think I've made it twice since, but this weekend with fresh brats waiting to be grilled I made potato salad - as best I could remember. I only know how to make it in a big bowl, so now I have potato salad for a couple of weeks.
Today I made spinach stuffed manicotti, another dish I haven't made in years. I learned how to impress another young women many years ago. And I haven't made it since - no noe I wanted to impress that much. Somehow over the years I'd forgotten how to stuff the pasta and ended up with spinach laced cheese all over my hands, but after an hour or so an early dinner of food so rich I coul;d feel my weight increasing as I ate. And of course this is another dish that works best making enough for 6-8 so I now have manicotti for a week.
I'm looking forward to my week of left overs. I enjoy both of these dishes much more than I should, but it's such satisfying comfort food. One almost pure carbs the other almost pure fat (well, cheese anyway) - I only need to add some Red dye #4 to make it the perfect trifecta, fat, carbs and carcinigin(sp?). I know I'm supposed to be taking care of my body as I grow older, but it just tastes too good.

Man, that post suddenly has me jonesing for some of my wife's potato salad--best I've ever had, and that's saying a lot having grown up in serious potato salad country down here in Aller-bammer. A word of warning though, Mnhermit: You'll have "Potato salad for a couple of weeks" in theory, but I wouldn't trust anything made with mayo and eggs, even chilled in the fridge, after about 3 or 4 days. The bacteria count on that stuff--anything cooked then refrigerated, really--can get out of hand pretty quick after that amount of time.

Say, how far are you from Newfolden? I forget if you are by Brainard or Park Rapids or Deer River. But any of those three would be a reasonable drive for brats and potato salad, especially with manicotti for desert.
I really, really love potato salad. Bring some to Iowa.

Marshall - I agree, a nice crunchy skin of carbon surrounding the soft juicy innards of bratwrst dripping juices onto a toasted bun with nothing but mustard.
Loopy - I use a mayo substitute, but yeah I'll prolly finish it up in a day or two.
Ok Johne - Potato Salad - 3 lbs new redskin potatoes, 1/2 dozen hardboiled eggs, 3 stalks of celery, 1 small dill pickle or some pickle relish. Boil the potatoes and eggs the night before and referigerate overnight. For more color leave the skin on the potatoes. chop up the eggs and potates how you like mix with chopped celery add the diced pickle or a couple of tablespoons of pickle relish and miracle whip to taste. I think I was taught to add onion too, but I didn't this time. Oh yeah a dollup of mustard - not too much.

VI, you can't even eat turkey skin what would your stupid-in-laws think if you got caught eating "crunchy skin of carbon surrounding the soft juicy innards of bratwrst dripping juices". Maybe they'd let ya have that turkey skin....???maybe.

I couldn't help myself, I picked up the fixin's for tater salad on my way home today. Added my own twist with a little Cholula Chili Garlic and Tabasco Green Chili sauce. Got some Johnsonvilles, Tuesday dinner is gonna be GOOD.

We were out walking this evening (Kim's got me going four miles a day, usually 20 feet behind her, and this post made me bring up potato salad. Has anyone here had hot potato salad? Not hot spicy, but served hot. Good stuff.
