As usual, Kim put on in the oven to perfection for our immediate family Christmas, and, as usual, we have left-overs. I'm looking for ideas on what to do with it.
My choice would be to cave-man it, holding the chunk in my hands and tearing off bites with my teeth, but Kim isn't allowing that. We made some really good French dips one night (thanks Bob for the idea of using beef consommé instead of the packaged au jus stuff), and some really good fajitas tonight. We're going to take a break from it for a couple days, then finish it up.
I'm thinking of some sort of beef/mushroom/pasta thing, but that's my idea at the moment. Does anyone have any suggestions? Thanks!

I concur with the beef/mushroom/pasta thing.
Saute the mushrooms with garlic and onions, season with a little celery salt, toss in the beef and a generous dollop of red wine.

Janice eats it for breakfast. Same with leftover pork chops.
I don't know what I'd do with leftover prime rib. I've never had a chance to find out.

Your original thought appeals. I also love roast beef sandwiches with horseradish. Beef dip I could do multiple nights.

I would mash up some potatoes. Make or buy some gravy. Buy some white Sweetheart bread. And it is hot beef sandwich time, sweet mama!

Dar makes a very nice Italian beef soup. It's a lot of work (she's making it today), but worth it. Of course, I might think it's worth it because she does the work and I do the eating.

The EZ way to do this is saute onions in olive oil until caramelized, add beef broth and sliced mushrooms and simmer a while, then a can of cream of mushroom soup and sour cream, garlic powder, ground pepper. Meat at the end (get the meat out and let it sit at room temp at the very beginning). And the widest egg noodles you can find.
