If I order eggs over, well done hash browns and a side of shredded cheddar that will become a shipwreck too. All mixed together and hit with hot sauce.

That would be a garbage omlet here. And if you want to take it to a higher level, you order a Jose Special. It's a garbage omlet with salsa on top.

Ordered Melinda's Amarillo and Yellowbird. Let us know what you think. We are all different but I've experimented with a LOT of these the last few years - sort of made it a hobby and these 2 as well as Dirty Dick's Hot Sauce are in permanent rotation.

I had the Yellowbird on eggs this morning (cooked with a dollop of chive cream cheese - very fluffy!). Head to head against CBC, I preferred the Yellowbird. Very good stuff.

I trialed my Yellowbird Serrano along with Yellowbird's Jalapeno sauce this weekend. And I just sampled them again just now, squirting some in a spoon while comparing them to Cholula Original.
Both the Yellowbirds are excellentay! Both are characterized by a clean fresh crispness. There is no "gumminess" or sense that there is anything between you and the pepper, a quality my mind has transcribed as "cleanness". The Serrano has an almost light citrusy quality to it. It is wonderfully spritely.
This clean fresh crispness that both exhibited marked them in contrast to the Cholula, which by comparison seemed thickened and gummy... processed.
A look at the ingredient labels explained what my tongue noted. The Cholula sauce contained powdered spices and xanthan gum. There was nothing processy in the Yellowbirds. The ingredient list of the Serrano sauce, top to bottom is: Serano peppers, cucumbers, onions, carrots, vinegar, garlic, cane sugar, salt, lime juice. The Jalapeno sauces list: Jalapeno peppers, carrots, onions, vinegar, garlic, sugar, salt, lime juice. In both cases, no thickening gums or powdered spices, nothing between you and the veggies. And I expect that is what led to the clean crispness both exhibited.
In both cases, I felt like I was biting into a fresh juicy pepper. And with the Serrano sauce, I sensed the cucumber and lime as well. There was a light "transparency" to the serrano peppers that allowed sweet hints of the other flavors to come through.
It's just like the Major said, moving from a gummy processed sauce to the fresh, clean veggie-crispness of Yellowbird is just like moving from a muddy dumb old Martin to the crisp clean sparkle of a Taylor. Smart man, that Major.

The Yellowbird Serrano has arrived and has been tested. This is the one I've been looking for while making do with others, thanks for the rec. Just enough bite, love the hint of citrus, perfect on eggs. Sweet corn season can't get here soon enough.

To be clear, Cholula still has a place in my cupboard. I just added the Chipotle to my bowl of fresh brewed bean soup. Next bowl, I will try , Yellowbird Jalapeno. (I did all three, Jalepeno, Serrano, and Chipotle, half, half, and half on my morning eggses.

Chollula. It’s oK if there is nothing really good available. Better than tobacco for sure. I prefer Ardvark secret sauce and or Siricha.

Mike How long do you chew your tobacco before applying it to your eggs? It makes a difference. You got to get that chew soft and gooey, if it's too lumpy you are missing out on the full flavor.
