One of my occupational hazards is editing copy about food and local restaurants and being tractor-beamed by them. Today's inbox included a lengthy piece on the best pho places in the Twin Cities, where we are blessed with dozens of Vietnamese eateries. Pho, pronounced "fuh," is for the uninitiated a beef-broth-based soup to which endless variations of proteins and veggies and noodles are added. On a subzero day like today, it's especially wonderful, but I know of no pho joints near me that deliver, so if I give into temptation after my shift ends, it's gonna mean chilling out, literally.

So good. We have a ton of Asian restaurants in Vancouver and a couple of good Pho places nearby. Asian noodle soups are the bomb. My girls prefer Ramen, Japanese noodle soup, and Susan and I really like it, too. That be some hearty stuff.

This plus one of these sliced up plus some of these and a sprinkling of these and a squirt of this and you are in business (five minute prep and all the stuff is in your kitchen)

I only discovered within the past year that ramen noodles in a GOOD broth made for a terrific dish.

So Pho-Kin-Ay would be run by retired military? (Marines, I'd guess.)
Our little family-run strip-mall Vietnamese restaurant seems to have fallen victim to the pandemic, its spot now occupied by Yet Another Taco Joint. Not that there's anything wrong with that, but St. Cloud is almost as awash in Mexican food as it once was with pizzas. At least our two Indian eateries have survived.

We're big fans of Chinese soup dumplings, where the soup is inside the dumplings. Best around these parts is at Joe's Shanghai, in Chinatown.

Pho kin ay Out loud? Fuh kin ay? My juvenile take. Sorry. We have a joint here called Pho King The staff all wear t-shirts emblazoned with "Pho King Good!" We live in a mostly Vietnamese neighborhood (an adventure, yes) and there are numerous places clustered about. So far, musty, shabby old Dang's still has the best pho.

Not Pho, but I've been a big fan lately of Singapore Mei Fun. Change of subject, I know. I understand it's not really a Singapore dish despite its name.

My friend's brother in law runs a pho place out on California. I don't know the name of it, but his brother in law initially wanted to call it Twenty Pho Seven. Then someone kindly explained how Pho was pronounced. His brother in law was crestfallen.
