I love toasted bacon and tomato sandwiches. Mayo, a little salt and pepper. None of that lettuce nonsense. Lettuce is fine in its place, but I was brought up on BT, not BLT, and this is the way. But, this morning, we had some really nice cheese and herb bread in the house. So that's what I had for the sandwich, and...it was wonderful. I may have discovered BT Nirvana. My cookbook will be coming out shortly.

And if you’re wondering why your sandwich is cold and dead as well, look no further…. Perhaps the reason you eschew the lettuce is due to the use of wilted iceberg lettuce. Though iceberg lettuce is widely served, I’m not certain it was meant for human consumption. Try your B LT with some fresh, crisp Romain lettuce or maybe even some fresh arugula.

An interesting variation that I like to have occasionally is BBTs. Bacon, fresh basil, and tomato.

There is a restaurant nearby that does a BLT that uses 1 lb of bacon. I have never ordered it but I know some who have & it’s huge. That’s a lot of bacon.

the kind of lettuce, the kind of bread, anything with it or not with it aside, what is out there that can't be improved with a bit of bacon? Nothing. Even Canadians like Rick Waugh surely wouldn't turn down a couple slices of bacon added to a serving of poutine.

Yep, gotta have avocado. Now the bacon is of concern to me also. My preference is thick-cut and baked in a convectional (thanks jdd2) or regular oven. I like it flat and straight and no smell in the house. Bread must be toasted enough to cut gums.
