Some people in our immediate neighborhood and surroundings still are without power since last night. Ugh. On our walk we saw something that the power company apparently set up. A table with solar panels and chargers that people can borrow to charge their phones. We are lucky to have had power since 10:30 last night.
Power is still out at our church. So whether or not we hear that it's back on before tomorrow morning, we won't be there in person. It takes a long time to cool the place down.
Meanwhile, at my suggestion, Mr. H has already made our brown rice for dinner. I pulled some pork and sauce out of the freezer (a recipe from a Hawaiian friend's mom) and we have leftover cooked carrots. If necessary we can throw it all in a pot together and heat it on the side burner on the gas BBQ. Hoping it doesn't come to that.

Well, of course, Explore MN didn't take Dottir and Katie to just ANY Asian restaurant, they took them to Union Hmong Kitchen in Uptown Mpls, whose chef, Yia Vang, is TV-famous and one of the state's top two or three chefs. He sat with them for a while and ordered some extras for them, and was described as totally charming. Elderdottir, rear:

Here's a shot of the entire platter. Dottir says she saved me some Hmong sausage, which I am eager to try. Tonight the focus is on culture at a Lantern Festival at Lake Phalen, food being served from ethnic food trucks.

Todd, no brown rice recipe. Just cook it. But your mileage may vary. The package says 45 minutes, but I think we only do 30 or 35 minutes. This is a short grain brown rice that Costco sometimes carries in a 12 pound package. They don't seem to have it now. But it is available at other stores in different sizes, e.g. Sprouts. www.lundberg.com/products/organic-brown-short-grain-riceWe tend to use whole grains as much as possible. Whole wheat spaghetti, whole grain bread (homemade) and hamburger buns, whole grain cereals, etc.

In a heavy-bottomed 3qt sauce pan,
Two-three measures of the rice,
Double that for the water to add,
A bit of salt and pepper (maybe a shake or few of red?),
A tablespoon or so of oil--I like the flavor of sesame--to keep it from sticking at the end,
Bring to a boil, cover well and reduce the heat to lowest possible. (back, small burner)
Keep an eye on it at the end, I listen for the sound of the last of the water disappearing, and/or use a bread knife or chopstick to probe the bottom to check for that. Turn the heat off and let it sit for another five minutes (if it started sticking at all, this will take care of that, too).
I like it done this way much better than the brown rice menu on a rice cooker--it comes out firmer/chewier and not the stickier version of the rice cooker. Done this way is better for fried rice, since the grains don't stick to each other so much.
(my wife doesn't like 'flavored' rice--w/sesame oil, salt/pepper in it. too many cooks and all that...)

Brown rice. I fry stuff for a couple of minutes in a wok with a little sesame and sunflower oil and then stir it up for another couple of mins with cooked brown rice sometimes. Finely chopped carrot, spring onions, shredded spring greens or some such, broken unsalted cashew nuts, chopped ginger and garlic, soy sauce.
That makes a quite pleasant bowl full.
Edit - a bit of chicken chopped into small pieces can be fried up with the other stuff too.

Thanks for all the brown rice recipes. I'm always wanting to try new things. So far I'm liking what I do on a stove-top pressure cooker:
2 cups brown rice, 2 1/2 cups water. (I used bottled water because I have a well with hard water, which is not a friend to dried beans or rice).
When it gets to pressure, I let it go for 18 minutes.
After 18 minutes at pressure I take it off heat and let it depressure completely before opening lid. Then I fluff it with a fork. Perfect every time.
