Mr. H also uses no tomato stuff in his enchilada sauce. Just dried Hatch chiles steamed. Add necessary water for consistency, some salt, and I think garlic powder. Run through the blender. The picante factor varies a lot. Even the "extra hot" chiles aren't always hot enough for him. But I kid him about his parents putting Tabasco on his baby food in El Paso.

Tomatoes with red chilis are okay but never with green chilis. Tomatillos with green chilis.

These are my favorite store bought pre cooked. The uncooked tortillas from Costco are really good, but they mold in the fridge before I can use them all. Mike
Mike, you're in Portland, right? I recently discovered my cousin and his wife have a tortilla-making company there, and I am going to online order some of their products (although I don't know if they will ship to the Northeast). The company is called Three Sisters Nixtamal, and my cousin's wife grew up in Mexico and learned how to make tortillas with this process and inherited her tia's grindstone. Looking good...

Howard, I’ve heard of Three Sisters, I thinjpk they have received some local press. They are in South East Portland, about an hour from where I live in Newberg. So going there would take at least two hours. At some point I would like try them, and if you could convince them to open a outlet in the far SW, that would be great.
