I have a santakou. It’s not my favorite. I keep it in the trailer because it’s smaller than my chefs knives and the trailer has limited space. But my go to is a chefs knife. A shun 8 inch classic, My precious.

We have the same knife, bought when Bill put us onto a sale. It was quite the sale, too, almost half-price as I recall. Rob, you recall the price? Little shop in NE Mpls called Eversharp, which I stop by periodically with my Ikon and a serrated edge paring knife that I also bought there, as the shop has the rare sharpening machine that does serrated edges, and you can wait for it, not drop it off and have to return.

I liked the knife thread - about skipping the pandemic, changes, losses. I did some writing and collaboration. There were five writers. I sent it to some of my friends.

I searched for knife sharpeners in my area a while back and didn't find anything. This time I searched and discovered that someone I know work-wise and Rotary-wise has a husband who might just be a professional knife-sharpener.
I do not trust myself to sharpen the knives I have; that's probably a big reason why a number of them are so dull. I didn't even pick up sharpening very well at guitar school. Part of it was there were no instructors there who were fanatical about sharp tools (since 90+% of the tools we used were power tools with replaceable blades). I need someone to show me how, watch me and show me how to correct my errors.

About 8 inches (20cm) is perfect for a chefs knife. Sharpening skills are easily learned. If I can do it anyone can. YouTube is your friend here. Good for you, Todd. I too can get joy from sharpening a knife. It is meditative. You guys can come over and lap my chisels for me. I have a Work Sharp that does a decent working edge on a chisel but the knife attachment sucks, which is why Terry passed it on to me. Lapping on a fine stone and leather gets the edge really sharp but you have to be wary of the material you are working on to keep a lapped edge.
