Oh, a interesting discovery on this trip. At our first campsite, we were camping with two other couples, old friends that Anita grew up with. One of the gals has celiac desease, and cannot do gluten. We rotated the cooking chores between the couples, being careful not to sabotage Megan’s dietary restrictions. On our breakfast turn, we found a package of King Arthur’s flour brand gluten free pancake mix. I didn’t expect too much of it, but it was gluten free so we got it. It was fabulous! So good it will stay in regular rotation at home, even though we don’t care about the gluten free bit. Usually for pancakes I make them from scratch using joy of cookings recipe. These were better. For what it’s worth. Mike On that note, I made some vegetarian chili tonight. Well, not real vegetarian chili. I used beef broth and Better than Bullion. I just gave the no meat a shot because beef costs to much these days. And you know, no bad at all!

Fish fillet sandwiches with American cheese only because I was out of sharp cheddar. A little salad on the side and followed by a nice big piece of sweet, juicy watermelon.

Cabbage rolls for me.I made these with ground beef and mild Italian sausage. I also made a batch last week but used mild sausage instead. There in the freezer right next to my super brownies.

I kept the remainder - the breast. I ate almost whole chicken with my fingers, teeth, throat and etc etc. I’ll watch it and I’ll watch it - maybe I should put it in a bag.

My Chicken Soup in a bowl Chicken meat, broth, peas, carrots, corn, green beans, onions, rice, salt, pepper, bay leaves, wooster, etc
Whole milk - not organic
Dessert - chocolate kisses or truffles

My dinner tonight is basically some celery and perhaps some red wine. I must lose more weight! But yesterday we splurged with a family get-together at a Tapas place in Salem, Oregon called "The Cozy Taberna."
Apparently, in Northern Spain, bars used to serve beer, and put a lid on it to keep the flies out. The lid was just a piece of bread. Then they began adding stuff on top of the bread for patrons to eat. In Spanish, "Tapas" means "lid."
Now, some Spanish bars regularly serve what we might consider appetizers along with your drink. These Spanish appetizers are called "Tapas," but you can make a meal of them. Our "Tapas were:
A cheese board, consisting of torta de aceite, dates, Marcona almonds, Leonora (goats’ milk. ES), Mahon (cow’s milk. ES), Shropshire Blue. (cow's milk. IE) Salt Cod Fritters with aioli Bacon wrapped dates (with Almond, Spiced Honey, and the date pits replaced with Marcona almonds) Clams Cataplana with grilled bread Flat Iron Steak and Patron Peppers Patatas Bravas Chorizo & Manchego Riot Roll Radicchio Salad with Manchego Vinaigrette. Green Olive Toast Sautéed Spinach with Pine Nuts. Golden Raisins, Muglio It was very good!

Tofu, with some ground ginger on it. Not yet, but to be added on that is a splash of shoyu (soy sauce).
The four trays in the middle, from left: first (orange) is ikura (salmon roe), then some buri (yellowtail), then a mix, then ika (cuttlefish).
The big leaves are shiso (shiso-no-ha), kind of minty, and hard to see next to those are some broccoli sprouts, for a little bite/tanginess.
Far left is nori/seaweed, the wrapper, into which it all goes--some rice, then ikura, sprouts, a piece of fish, shiso, and then kind of roll it up together like a doobie. Dip in shoyu with some (fake) wasabi in it.
Yum!

Sorry I'm a little obtuse about this, but it's so different than what I throw together from the store (or a meal prep kit). And who washes all the dishes? It's really easy, one of the easiest. All the trays come that way from the store, kind of deli-like in that you pick what you want. The only thing to cook is the rice, can be done on the fast cycle (~15min), and then mix a little vinegar in with that. Very summery, since at serving the rice is only lukewarm or room temp, the fish has been in the fridge till putting it on the table. You do have to wash/rinse the leaves, pat dry w/paper towel, and grind the ginger. The nori also comes in bigger sheets, so cut that a time or two. Very fast and easy, almost picnic-like. Downside is not many veggies, the ikura and shoyu are salty, and ikura, being a bunch of mini eggs, does have cholesterol.

Marinated strip steaks were just fabulous. A little salad on the side and I even got a little kiss on the side from DaWife, she liked them.
Tomorrow night will be Pork Fritters or Shrimp Scampi. Or, if I'm lucky DaWife will cook.

I had a great deal meal. 4:30pm it’s lunch because I wake up late. I had a huge lean beef - cheese hamburger, potato chips w/o salt.
Now I’m watching the Yankees and the other team are losing- woohoo It’s early - 2nd inning
So some dessert - I need some milk chocolate kisses

Neither of us felt like really cooking but I didn't want to spend the $ to order in so I pulled out a Little Oven frozen pizza and we had that with salad.
