You may b looking at the pricier stuff, I suppose. But, I inherited one of those "showtime"things that was advertised on tv. Kind of a ronco thing, i think, "not available in stores". Not something I'd ever buy, but a neighbor bestowed it on me when she moved.
So, it's probaby a POS. BUT, I have used the thing pretty frequently and (i'm almost ashamed to say) really like it. Works great on birds or steaks. I never thought I'd have a use for it, but what can I say, it works...
Anyway, there's not temp settings. No fans. Just set it for the time (usually, so much per lb) and let 'er rip.
