My rural relatives used to keep their apples in the cellar. They'd pick them, let them sit out for a couple days, and then take them into the basement (in an old farmhouse that's a dirt floor with limestone walls) and bury them in sand. Why that worked, I don't know but they'd keep until spring. Same with turnips and other root stuff. I assume it has something to do with the lack of oxygen, light and airflow.

It's interesting to me that PAC NW Honeycrisps are different enough from our local ones that I never buy them, even though they arrive here well before ours are picked. Freshness counts, of course. And First Kiss was developed so we can have an early variety similar in taste and texture to the U's other winners. Me too in NH. Never understood the big whoop over Honeycrisp.

They're good! At least the New York State variety to which I have access.
We have a terrific green market right down the street every Saturday, and in the fall, there're apples a-plenty.

We are in an apple golden age. Honeycrisp kicked it off. It's probably still my favorite, but there are several newer varieties that make me happy: Cosmic Crisp (a virtual Honeycrisp ripoff ((Honey's patent protection has expired)); the later U of M releases, Zestar and SweeTango; Ambrosia; some others I can't think of off hand.
The taste pinnacle is reached when you get apples from an orchard that had a great growing year and were handled properly in delivery and storage. There are good Honeycrisps and GREAT Honeycrisps. Once the Minnesota nights turn crispy cool, the great Honeycrisps start showing here.
(each apple variety has its preferred climate and length of peak tastiness. One reason Galas are so consistently "OK" anywhere and at anytime is that they don't seem to care where they are grown and keep their "ok-ness" for a long time; very productive trees.)

McIntosh was what I grew around but they don't store well so they're becoming extinct. I like McIntosh. The ones around here tend towards the small side. My Mom's favorite was Winesap. They have a more rustic look to me, with some skin blemishes and not much shine. Not photogenic apples, but tasty.

Bruce, my daughter returned home from apple picking yesterday with a 25-lb bag of apples, the majority of which were McIntosh. I think they are plentiful in New York.
And that was after I asked her to keep her eye open for Mutsu and Honeycrisps.

As a kid, I was often the handle turner on the foley food mill.
And if you've never tried it, applesauce goes great on pancakes or french toast.

We will be looking for a nice variety apples on Sunday. For:
Salads
With vanilla ice cream and warm caramel sauce.
A quick lunch of sliced apples, sharp cheddar cheese and savory crackers.

I think ours was antique even then. What you don't see is a heavy wire that also turns around underneath, to scrape off the apple as it comes thru. PicsNot just for applesauce, an alt name is a 'ricer'.
