Corn on the cob, cotija cheese, chile seasoning and lime juice seems like a knockout combo, but elotes start with a coating of mayo before those other ingredients, which has always seemed so rich and unnecessary to me. So imagine my delight when I made my first visit to Capital Corn today, on Payne Ave, and they were happy to make me one with no mayo, lime wedge on the side. Brought it home with some birria consommé in ramen noodles, an odd mix, but wonderful, and perfectly spiced. A lot of food for $15! Marty, it's in that corner Mex complex of shops on the west side of the street. No dine-in atmosphere whatsoever, takeout recommended. Who loves elotes?

This place can't be too distant: www.cauchorestaurant.com/On edit, I just called Caucho, and they do NOT have elotes -- misleading home page photo of grilled corn! I bet there are spots in Iowa City that have them.

This is what your standard elote looks like. They are everywhere in St. Paul, including street stands, less so in Mpls.

At the Chili's chain they call a similar item roasted street corn. I prefer just butter.

Many places will do Elotes in a cup. All the goodness with less work.

I love elotes. I've made them but it's work and it's easier to patronize a place that makes them.

I appear to have at least the start of an elote addiction, now that I know that it's possible to get them w/o mayo. Today's was from El Burrito Mercado, the heart and soul of St. Paul's Hispanic community. The difference between their elotes and Capital Corn's is that the Mercado roasts the ears with husks on, while CC husks them and boils them in water.
I liked both a lot, but I prefer CC's seasoning, plus the place is closer to my domicile.
I guess it's in the back of my mind that sweet corn has a pretty limited window of prime time, hence the temporary addiction.

I've had sweet corn pick, shucked and cooked in 15 minutes. You can only eat it fresher if it's raw. I have eaten smaller ears of raw sweet corn and it's sweet.
