We get at least 2 rounds of some sort of GI virus per semester, and we are in the midst of one now on campus. For most folks, symptoms last 12-36 hours, and can be managed with simple medication and plenty of fluids. It is a pretty miserable 12-36 hours, though.
These things spread rapidly, so large numbers of people wind up infected at a time. The situation described in the linked report is a little unusual, but not terribly surprising.
Ever since COVID, we see a phenomenon one might call "virus panic." People will stay home even if they are not sick, just as a precaution. I suspect a fair number of the absences in that school fall into that category.
The best defense against these GI viruses is frequent hand washing.
