DaWife made a simple salad tonight. A while back one of her cooking shows mentioned Halloumi cheese in a recipe and it gave her an idea. It was left to me to find the cheese and while she was Up Nort with our girls, I did.
Spring mix greens, honey roasted pecans and dried cranberries, marinated and grilled chicken breast pieces, lots of small pieces of fried Halloumi and dressed with a Sweet Vandalia Onion dressing. Fabulous!
The fried Halloumi has a salty but very nutty flavor and squeaky texture of mozzarella. Now that I know where to get it, it will be a staple in the cheese drawer with the white cheddar slices and the shredded 3 cheese mix.

Exquisite reheated leftovers from Elderdottir's travels, including a melange of this dish from the Krewe NOLA eatery in St. Joseph, Minn. (Maque Choux, below), combined with some chopped Hmong sausage from her visit to Union Hmong Kitchen in Mpls. Delish! BTW, she is home safe and sound after a two-leg flight. Krewe's description: Sweet corn, onion, garlic, forest mushrooms, poblano pepper, red bell pepper, creole seasoning, cream, baguette.

We have a local NOLA-style chain called Yat's that has maque choux on its daily menu. Probably a little downscale from your version, but yummy all the same.

Home Alone. Time for some experimental cooking. Italian sausage and gnocchi in tomato sauce, with the requisite garlic, onions, green pepper, and mushrooms; washed down with cheap red wine (cheap red wine also added to the sauce)

Eating large burrito pork rice tomato salsa - it was very good. I couldn’t even eat it - half. So I have the next one lunch.

I made chicken enchiladas. Pan fry seasoned chicken tenders in butter and shred. In a mixing bowl goes the shredded chicken, ricotta cheese, grated sharp cheddar, two eggs, small can of diced green chiles, small can of sliced black olives, some minced garlic and chopped yellow onions, and a splash of green enchilada sauce. I put in salt, pepper, cumin, and some smoked red pepper flakes(Merquen). Stir this all up until it's well mixed. Pour some of the green sauce in your baking dish to coat bottom. Roll the chicken/cheese mix up in flour tortillas and load the pan up. Pour remaining green sauce over the rolled shells and top with grated cheddar. Bake 350 1 hour.

Mini Tacos, just a snack really, we both had good lunches.
Might need to defrost some Members Mark Hot Dogs for dinner soon. They are huge and come 12 to a box so we freeze half of them. If you can normally eat 2 Nathan's you may be just fine with 1 of these. I like my hot dog well dressed, lots of stuff on it and by the time I get all that stuff on the dog it's too big to pick up. Knife and fork time. Spicy brown mustard, sharp white cheddar, banana peppers, onion and pickle. Chili? yes please.

A little dinner/lunch - cheese and bologna - it wasn't a sandwich Not mayo, mustard, bread Sparkling plain water w nuts
Approx 5pm ----Doin' dinner/supper - chicken thighs, baked potato w/bacon bits, carrots THEN coffee ice cream with chocolate syrup

I'm glad it worked because I'll be eating it for the next few days.
